They are small, inconspicuous and full of power: lentils are one of the oldest cultivated plants known to humankind. Once considered a food for the poor, they are now making a comeback as a sustainable source of protein, even among younger chefs. The Häußler family in the Swabian Alb cultivates their organic plantation and conjures up traditional dishes such as lentils with spaetzle from the legumes. Lucie Fischer-Chapalain demonstrates the culinary versatility of lentils with spicy tortillas and fresh salads. This little legume packs a punch: with up to 25 per cent protein, it is a perfect meat substitute and is even considered a lucky charm for wedding couples in Ethiopia.
